The name of Bollinger’s emblematic champagne, with its English spelling, encapsulates its entire history. In celebration of over 40 years of partnership as the Official Champagne of 007 and the upcoming film No Time To Die, Champagne Bollinger has produced a limited edition gift box that brings together three icons: Bollinger’s signature Special Cuvée, the Aston Martin DB5 and James Bond.

The non-vintage blend is always based predominately on wines made from the current harvest, enriched with aged wines (their proportion and age varies by brand) from earlier harvests, which impart an additional level of complexity to the end wine. It has a fabulous nose (some Bubbly has a certain smell that when putting to your mouth to take a sip/gulp up to you' :-) . Decided to treat myself to a nice bottle of bollinger for Christmas day and really enjoyed it, the flavours were amazing really worth spending extra on a nice bottle of bubbly. Age is shown through cooked apples, nuts and dried peaches which are kept fresh by pear and high acidity.Bollinger is the only house to have aresident cooper in situ to take care of more than 3500 barrels only dedicated to Bollinger Champagnes. Bollinger has land-owning roots in the Champagne region dating as far back as the 16 th century although the house as we know it today was officially established only in 1829, by Paul Renaudin and Jacques Bollinger.

The essence of the wines comes from the 166 hectares of Premier and Grand Cru vineyards owned by the House in Avenay, Champvoisy, Cuis, Louvois, Tauxières and Verzenay, as well as the stellar Pinot Noir site La Côte Aux Enfants in the heart of Aÿ.The history of Bollinger starts with Athanase de Villermont a noble man with an interest for Champagne. In the making of this champagne, reserve wines aged in magnum bottles in the private Bollinger cellar are used that only make up 10% of the cuvée – this fact makes this cuvée very special. The House's 178ha are planted with 85% Grand and Premier Cru vines, and include two famous plots, the Clos Saint-Jacques and Chaudes Terres. It was the British agent of Georges Bollinger who, in 1911, christened it “Special Cuvée”, as he found the expression “non-vintage brut” did not befit a champagne of such subtlety. The complexity and richness of Special Cuvée is unparalleled among the entry non-vintage blends of every Champagne house, short of ascending to the mesosphere of Krug.
